Ingredients:

4 large bell peppers (any color), tops cut off and seeds removed
1 lb ground beef or turkey
1 cup cooked rice
1 small onion, finely chopped
2 cloves garlic, minced
1 can (14.5 oz) diced tomatoes
1/2 cup tomato sauce
1 teaspoon dried oregano
1 teaspoon paprika
1/2 teaspoon cumin
Salt and pepper to taste
1/4 cup shredded cheese (optional, for topping)
2 tablespoons olive oil
Fresh parsley, chopped (for garnish)

Preheat the Oven:

Preheat your oven to 375°F (190°C) and lightly grease a baking dish.

Prepare the Filling:

Heat olive oil in a skillet over medium heat. Add the chopped onion and garlic, sautéing until softened, about 3-4 minutes.

Add the ground meat and cook until browned. Drain any excess fat.
Stir in the cooked rice, diced tomatoes, tomato sauce, oregano, paprika, cumin, salt, and pepper. Simmer for 5-7 minutes.

Stuff the Bell Peppers:

Place the bell peppers upright in the prepared baking dish. Spoon the meat and rice mixture into each bell pepper, packing it tightly.

Top with shredded cheese if desired.

Bake:

Cover the dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 10 minutes until the peppers are tender and the cheese is melted.

Serve:

Garnish with chopped parsley and serve hot.
