Ingredients:

For the Batter:

1/2 cup unsalted butter, softened
2/3 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup milk

For the Apple Cinnamon Filling:

2 medium apples, peeled, cored, and chopped (about 1 1/2 cups)
1/4 cup granulated sugar
1 tablespoon ground cinnamon
1/4 cup brown sugar

1 tablespoon cinnamon
2 tablespoons granulated sugar

Instructions:

1. Preheat Oven:
Preheat your oven to 350°F (175°C).
Grease and flour a 9×5-inch loaf pan or line it with parchment paper.

2. Make the Batter:
In a large mixing bowl, cream together the butter and 2/3 cup sugar until light and fluffy.
Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
In a separate bowl, whisk together the flour, baking powder, and salt.
Gradually add the dry ingredients to the butter mixture, alternating with the milk, beginning and ending with the flour mixture. Mix until just combined.

3. Prepare the Filling:
In a small bowl, mix the chopped apples with 1/4 cup granulated sugar, brown sugar, and cinnamon.

4. Layer the Loaf:
Pour half of the batter into the prepared loaf pan.
Sprinkle half of the apple cinnamon mixture over the batter.
Combine 1 tablespoon cinnamon and 2 tablespoons sugar to create the cinnamon swirl mixture, and sprinkle half of this mixture over the apples.
Spread the remaining batter on top, then sprinkle the remaining apple cinnamon filling and cinnamon swirl mixture on top.

5. Bake:
Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
If the top starts to brown too quickly, cover it loosely with aluminum foil for the remaining baking time.

6. Cool and Serve:
Allow the loaf to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Slice and serve.
