Instructions:
Preheat oven to 400°F. Line a large rimmed baking sheet with aluminum foil and spray with olive oil cooking spray. Set aside.
In a large mixing bowl, combine ground beef, Italian sausage, egg, breadcrumbs, parmesan cheese, onion, half & half, garlic, Italian seasoning, salt, and pepper. Mix until well combined, but avoid overmixing.
Use a 2-inch cookie scoop to portion out 15 meatballs. Flatten each meatball into a disc, place a mozzarella cube in the center, and fold the sides up, forming a meatball.
Arrange the stuffed meatballs on the prepared baking sheet.
Bake for 20-25 minutes, or until lightly browned and cooked through.
While the meatballs bake, warm marinara sauce in a skillet over medium-low heat.
Once cooked, let the meatballs rest for 5 minutes.
To serve, spoon warm marinara sauce onto a plate, place meatballs on top, and garnish with extra parmesan cheese and parsley. Enjoy!
