Instructions:

Make the crust: Preheat oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Press into the bottom of a 9×13 inch baking pan. Bake for 10 minutes, then let cool completely.
Make the filling: In a large bowl, beat cream cheese until smooth. Gradually add sugar, flour, and salt, beating until well combined. Beat in eggs one at a time, then stir in vanilla extract and heavy cream.
Bake: Pour filling over cooled crust. Bake for 45-50 minutes, or until the edges are set but the center is still slightly jiggly. Let cool completely in the pan before refrigerating for at least 4 hours.
Make the topping: Sprinkle sugar evenly over the cooled cheesecake.
Brulee: Using a kitchen torch, caramelize the sugar until golden brown.
Serve: Cut into bars and serve immediately.

Tips:

For a richer flavor, use dark brown sugar in the crust.
If you don’t have a kitchen torch, you can broil the cheesecake for a few minutes to caramelize the sugar.
Serve with a dollop of whipped cream or a drizzle of chocolate sauce.
