Instructions:
Prepare the Pie Crust:
In a bowl, mix flour and sugar. Cut in the butter until the mixture resembles coarse crumbs.
Gradually add ice water, mixing until the dough comes together.
Shape into a disk, wrap in plastic, and refrigerate for 30 minutes.
Preheat Oven:
Preheat oven to 375°F (190°C).
Roll Out the Dough:
On a floured surface, roll out the dough to fit a 9-inch pie dish.
Transfer to the dish, trim and crimp the edges.
Prepare the Filling:
In a large bowl, mix mashed sweet potatoes, sugars, spices, and salt.
Beat in eggs one at a time, then stir in evaporated milk and vanilla.
Assemble the Pie:
Pour the filling into the prepared crust.
Bake:
Bake for 55-60 minutes, or until the filling is set and a knife inserted in the center comes out clean.
