Instructions:

  • Make the Pastry:

In a large bowl, mix the flour and salt.
Add the chilled butter and mix until the mixture resembles coarse crumbs.
Gradually add cold water, one tablespoon at a time, mixing until the dough comes together.
Divide the dough into two discs, wrap in plastic, and refrigerate for at least 30 minutes.

  • Prepare the Filling:

In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
Add the chopped onion, diced potato, and carrot to the skillet. Cook until the vegetables are tender, about 5-7 minutes.
Stir in Worcestershire sauce, thyme (if using), and season with salt and pepper. Let it cool slightly.

  • Assemble the Pasties:

Preheat your oven to 400°F (200°C).
Roll out one disc of pastry on a floured surface to about 1/8-inch thick. Cut into circles (about 6-8 inches in diameter).
Place a generous spoonful of filling on one half of each circle.
Fold the other half over to create a pocket and crimp the edges to seal.
Repeat with the remaining pastry and filling.

  • Bake the Pasties:

Place the pasties on a baking sheet lined with parchment paper.
Beat the egg and brush it over the tops of the pasties for a golden finish.
Bake for 25-30 minutes, or until golden brown.

  • Serve:

Let the pasties cool for a few minutes before serving. Enjoy them warm!
