Instructions:

1. Preheat Oven:
Preheat your oven to 350°F (175°C).

2. Brown the Pork Chops:
Season the pork chops with salt, pepper, paprika, and garlic powder.
In a large skillet, heat the olive oil over medium-high heat.
Brown the pork chops on both sides for about 3-4 minutes per side. Remove them from the skillet and set aside.

3. Sauté the Vegetables:
In the same skillet, add the sliced onions and bell peppers. Sauté for 4-5 minutes until softened.

4. Prepare the Sauce:
In a medium bowl, mix the cream of mushroom soup, sour cream, and chicken broth until well combined.
Stir in the thyme, if using.

5. Assemble the Dish:
In a greased baking dish, layer the browned pork chops.
Spread the sautéed onions and bell peppers over the pork chops.
Pour the cream sauce over the top, making sure everything is evenly covered.

6. Bake:
Cover the baking dish with foil and bake in the preheated oven for 30-35 minutes, or until the pork chops are fully cooked and tender (internal temperature should reach 145°F or 63°C).
Remove the foil in the last 5 minutes of baking for a slightly golden top.

7. Serve:
Let the dish rest for a few minutes, then garnish with fresh parsley.
Serve the pork chops with rice, mashed potatoes, or your favorite side dish.
