Instructions:

1. Prepare and Roast the Beef:

Preheat the oven to 350°F (175°C).

Season the beef roast generously with salt and pepper on all sides.

Heat the olive oil in a large ovenproof pot or Dutch oven over medium-high heat. Sear the beef roast on all sides until browned, about 2-3 minutes per side.

Remove the beef from the pot and set aside. Add the garlic, onions, carrots, and potatoes to the pot and sauté for 3-4 minutes, stirring occasionally.

Place the beef back into the pot, nestling it among the vegetables. Add fresh rosemary, thyme, beef broth, and Worcestershire sauce.

Once the roast is ready, transfer the beef to a cutting board and slice it. Arrange the vegetables on a serving platter.
