Instructions:
Heat olive oil in a large pot over medium heat.
Brown the beef cubes on all sides, then set aside.
Sauté onion and garlic in the same pot until soft.
Add cinnamon, oregano, and tomatoes; stir well.
Return beef to the pot, add broth and bay leaves, and bring to a simmer.
Add carrots and potatoes, then cover and cook for 1.5 hours until tender.
Season with salt and pepper, garnish with parsley, and serve.
