Deviled Egg Pasta Salad Recipe

Directions:

1. Cook the pasta according to the package instructions. Add a big pinch of kosher salt to the water. Once cooked, drain the pasta and rinse it with cool water.

2. While the pasta is cooking, peel the hard-boiled eggs. Separate the yolks from the whites.

3. Chop the egg whites into small pieces and set them aside. Crush the yolks into a fine powder using a fork or press them through a fine strainer into a large mixing bowl.

4. In the bowl with the crushed yolks, add the mayonnaise, mustard, vinegar, garlic, salt, paprika, and cayenne pepper. Whisk everything together until smooth.

5. Add the cooled pasta to the dressing in the bowl. Stir to coat the pasta well.

6. Mix in the chopped red onion, green onions, and egg whites. Stir until everything is combined.

7. If you like, garnish with extra green onions and paprika on top. Serve right away or cover and chill in the fridge until you’re ready to enjoy it.
