Gourmet Smash Burger Pancakes

Directions:

In a bowl, season the ground beef with salt and black pepper. Divide into 8 small patties and set aside.

Heat a skillet over medium-high heat. Cook the patties until browned and cooked through, about 3-4 minutes per side. Remove from skillet and keep warm.

In the same skillet, sauté the diced onions until soft and translucent. Set aside.

In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

In another bowl, whisk together the buttermilk, egg, and melted butter. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the cooked onions, shredded cheddar cheese, and chopped parsley.

Heat a non-stick griddle or large skillet over medium heat and grease with cooking spray or butter.

Pour 1/4 cup of batter onto the griddle for each pancake. Place a cooked burger patty on top of the batter and then cover with a little more batter.

Cook until bubbles form on the surface of the pancakes and the edges look set, about 2-3 minutes. Flip and cook for another 2-3 minutes, until golden brown and cooked through.

Serve the savory smash burger pancakes warm, garnished with additional parsley if desired.
