Mac and Cheese Meatloaf Casserole

Directions:

Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.

In a large bowl, combine ground beef, ground pork, breadcrumbs, milk, eggs, onion, garlic, salt, pepper, paprika, oregano, and thyme. Mix until well combined.

Transfer meat mixture into the prepared baking dish and shape into a loaf shape.

In a small bowl, mix together ketchup and BBQ sauce. Spread half of the sauce mixture evenly over the meatloaf.

Bake meatloaf in the preheated oven for 30 minutes.

While the meatloaf is baking, prepare the macaroni and cheese sauce. Cook elbow macaroni according to package instructions. Drain and set aside.

In a saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute until bubbly.

Gradually whisk in milk and cook, stirring constantly, until sauce thickens.

Remove saucepan from heat and stir in shredded cheddar cheese until smooth. Season with salt and pepper to taste.

Pour cheese sauce over cooked macaroni and stir to coat evenly.

Remove meatloaf from oven after 30 minutes and spread remaining sauce mixture over the top. Return to oven and bake for an additional 15-20 minutes, or until meatloaf is cooked through (internal temperature of 160°F/70°C) and cheese is bubbly.

Serve Mac and Cheese Meatloaf Casserole hot, garnished with fresh parsley if desired.
