Instructions:

For the Chicken:

In a small bowl, mix together the chili powder, garlic powder, onion powder, red pepper flakes, oregano, paprika, cumin, salt, and black pepper.

Season both sides of the chicken breasts evenly with the spice mixture.
Grill the chicken over medium-high heat until fully cooked through, reaching an internal temperature of 165°F, about 6-8 minutes per side.
Remove from grill and set aside to rest.

For the Cheese Sauce:

In a saucepan, melt the butter over medium heat.
Whisk in the flour and cook for 1 minute until bubbling.
Gradually whisk in the milk and continue cooking until thickened slightly.
Remove from heat and whisk in the shredded cheddar cheese until fully melted and smooth.
Stir in the salt, cayenne pepper, and paprika.
Adjust seasoning to taste if needed.

To Serve:

Slice the grilled chicken breasts and transfer to plates. Generously spoon the creamy cheddar sauce over the top.
Garnish with chopped parsley or green onions if desired. Serve hot.

Notes:

For spicier sauce, increase the amount of cayenne pepper.
Let chicken rest 5 minutes before slicing to allow juices to redistribute.
