Tilapia in Roasted Pepper Sauce

Instructions:

Season tilapia fillets with salt, pepper, and paprika. Heat olive oil in a large skillet over medium heat. Cook the tilapia for 3-4 minutes per side until golden brown and cooked through. Remove and set aside.

In the same skillet, add butter and sauté the onion until softened. Add garlic and cook for another minute.

Add the roasted red bell peppers and chicken broth to the skillet. Simmer for 5 minutes, allowing the flavors to meld.

Stir in the heavy cream and Parmesan cheese, cooking until the sauce thickens.

Return the tilapia to the skillet, spooning the sauce over the fillets. Cook for an additional 2-3 minutes until the fish is heated through.

Serve hot, garnished with fresh basil or parsley.

Notes:

Pair with rice, mashed potatoes, or pasta to soak up the flavorful sauce.
